PRINTER-FRIENDLY PDF >>IntroductionAzodicarbonamide (ADA) FCC Food-Grade 98% raw material is an oxidizing agent (oxidant) used as a substitute ingredient for potassium bromate to help improve the quality of wheat flour (flour improver). This is a true Food-Grade ingredient (not Industrial-Grade).
BenefitsAzodicarbonamide (ADA) FCC Food-Grade 98% raw material functions as a dual oxidant ingredient in the maturation of wheat flour (flour improver). It not only accomplishes bleaching of the flour as an oxidant of carotene in fresh flour, but this ingredient also improves flour strength by oxidizing cysteine. The increased strength enabled by this raw material improves the gas retention of wheat flour dough and elasticity of bakery products. This oxidant ingredient can be a bromate substitute, flour improver.
AdvantagesAzodicarbonamide (ADA) 98% FCC Food-Grade's rapid oxidation reaction enables shorter storage periods for wheat flour and faster fermentation of wheat flour doughs.
This is a true purified Food-Grade raw material, unlike Industrial-Grade bleaching ingredients that have often been misused in food applications.
Potassium bromate (a bleaching agent that ADA FCC Food-Grade replaces), has shown the potential to be a carcinogen. Because many counties have forbidden the use of bromate, Azodicarbonamide (ADA) FCC Food-Grade can be used as an effective oxidant alternative to bromate bleaching agents and flour improvers.
Quality AssuranceFull certificate of analyses is provided with each shipment of this ingredient, guaranteeing the highest and most consistent quality standards. We guarantee that ISI's ADA FCC Food-Grade 98% is not an Industrial-Grade ADA raw material. This ingredient has gone through rigorous purification steps to meet FCC Food-Grade standards.
RegulatoryCAS Registry Number: 123-77-3
ApplicationsAs a wheat flour improver, bromate replacement, Azodicarbonamide (ADA) FCC Food-Grade 98% is added at a maximum dosage of 4.5g per 100 kg wheat flour (2 grams per 100 lbs. wheat flour).
