Azodicarbonamide (ADA) FCC Food-Grade 98% raw material functions as a dual oxidant ingredient in the maturation of wheat flour (flour improver). It not only accomplishes bleaching of the flour as an oxidant of carotene in fresh flour, but this ingredient also improves flour strength by oxidizing cysteine. The increased strength enabled by this raw material improves the gas retention of wheat flour dough and elasticity of bakery products.
