IntroductionAzodicarbonamide (ADA) is an oxidizing agent used as a substitute for potassium bromate to help improve the quality of wheat flour.
BenefitsAzodicarbonamide (ADA) functions as a dual oxidant in the maturation of wheat flour. It not only bleaches flour by oxidizing carotene in fresh flour, but also improves flour strength by oxidizing cysteine. The increased strength improves the gas retention of dough and elasticity of bakery products.
AdvantagesAzodicarbonamide (ADA) rapid oxidation reaction enables shorter storage periods for flour and faster fermentation of dough.
Potassium bromate, which ADA replaces, has shown the potential as a carcinogen. Because many counties have forbidden the use of bromates, Azodicarbonamide (ADA) can be used as an effective alternative.
